Tasting notes

Nose: Subtle citrus and cooked maguey notes.
Appearance: Crystalline of medium legs.
Taste: Clear mandarin, lime, orange notes and a touch of mint and spearmint.
Pairing: Perfect as an aperitif on its own or in cocktails. Splendid with fish and seafood, grilled meats, and chocolate desserts.

AGAVE ANGUSTIFOLIA
Maturity: 5 - 9 years. Smooth on the palate with a smoky touch. Found from Sonora to Chiapas.

Tobalá

AGAVE POTATORUM
Maturity: 8 - 14 years. Smoky, light, and subtle flavor. It is found in the mountains of Oaxaca and Puebla.

Arroqueño

AGAVE AMERICANA
Maturity: 8 - 18 years. Intense aroma but soft on the palate. It is found in Oaxaca and Puebla.

Madrecuishe

AGAVE KARWINSKII
Maturity: 8 - 25 years. Aromatic, always leaves a slightly bitter aftertaste. It is found in Oaxaca and Puebla.

Tepextate

AGAVE MARMORATA
Maturity: 12 - 24 years. A sensation of freshness, great mineral strength, and floral accents. Found in Oaxaca and Puebla.

Papalote

AGAVE CUPREATA
aturity: 8 - 12 years. Fresh and sweet to the palate. It is found in Guerrero, Michoacán, Estado de Mexico, and Puebla.

Pulquero

AGAVE SALMIANA
Maturity: 8 - 18 years. Young flavor. Found in San Luis Potosi, Zacatecas, and northern Guanajuato.

Cenizo

AGAVE DURANGUENSIS
Maturity: 8 - 16 years. Fruity aromas - citrus, earthy and sweet. It can be smoky. Found in Durango.

Mexicano

AGAVE RHODACANTHA
Maturity: 7 - 14 years. Aroma and sweet flavor of fermented fruits and xoconostle. It is found in Oaxaca.

Lechuguilla

AGAVE MAXIMILIANA
Maturity: 7 - 14 years. Aroma and sweet flavor of fermented fruits and xoconostle. It is found in Oaxaca.

Alto

AGAVE INEAQUIDENS
Maturity: 8 - 16 years. Flavor with notes of incense, copal, and lots of green plants. It is found in Guerrero.
