Santo Gusano is a mezcal with citrus tones that make it different. Our 100% artisanal process and diversity of terroirs, combined with the maguey Espadín, make mezcal from Oaxaca a great experience for the senses.

CARE AND CULTIVATION

 

Our mezcal master tours the agave fields daily, taking care of all aspects of production to ensure the quality and flavor of our mezcal.

 

Mezcal Santo Gusano is made with agaves selected one by one to preserve the flavor that characterizes us. Each wonderful plant must have a maturation time between 7 and 9 years.

Once the agave reaches maturity, its stalks are cut in the field to obtain a product full of the flavor of the land where it was born.

 

The agave hearts are baked in a traditional oven on the ground; at this stage, the sugar caramelizes and gives it a slightly smoky profile.

The agave hearts (pineapples) are ground in a traditional tahona slowly extracting all the sugar.

 

Fermentation is carried out in Sabino wood vats with local natural yeasts, without chemicals in the process.

Santo Gusano uses a double distillation process in a traditional copper still; in this phase, we obtain the characteristic flavor carefully elaborated by our Mezcal Master.
